Summer foods that sizzle

Summertime floods me with memories of pool parties and barbecues.  Since we don’t have a grill to fire up, I went to Lee Roy Selmon’s for lunch this week.  I started off with their Rockin’ Shrimp and absolutely fell in love.  Lightly battered and fried, they were served with two sauces, my favorite being the sweet red pepper sauce.  I was tempted to slide some in my purse. 

For the entrée, I had some of their baby back ribs; slowly smoked and grilled, the meat just fell off the bone.  They were delicious, a perfect summertime dish, but the real star of the meal was their new Sweet Sizzlin’ Corn.  I was expecting your average corn on the cobb and was pleasantly surprised!  Brushed with a chipotle mayo and rolled in Cotija cheese, the corn was succulent, sweet and had a little back heat from the mayo. I ate the whole thing!

For dessert, I tried their Crunch Time Sundae – because I love summer just because of the excuse to eat ice cream.  The Sundae is a scoop of ice cream rolled in crushed Captain Crunch cereal with hard shell chocolate, whipped
cream and Reese’s peanut butter chips.
